Thai Fried Banana (Kluay Khaek)
This recipe I very proud to present because I love "Fried Banana",The taste is sweet from bananas,crispy and you can taste coconut flake...hmmm yum yum

Ingredients;
Sweet bananas,Slice the bananas lengthwise into 1/4-inch slices              6   bananas.
Rice flour                                                                                          130 g.

Wheat flour or all-purpose flour                                                            50 g.
Coconut Milk                                                                                      160 ml.
Sugar                                                                                                  50 g.
Salt                                                                                                     1  tea spoon
White sesame seeds                                                                             50 g.
Coconut flake                                                                                    150 g.
Lime water                                                                                         2  table spoons.
Vegetable oil * for deep fried                                                               3-4 cups.
How to cook ;   
1.Slice the bananas lengthwise into 1/4-inch slices
2.Add all ingredients  and mixed well.
3.Use a medium frying pan or a pot, heat up the oil to about 350° F. Keep the temperature steady.
4.Put the banana slices into the batter. Pick up one slice at a time, making sure it's thoroughly coated with the batter, and carefully lower it into the hot oil. Don't fry too many slices of banana at the same time as it will cause the oil temperature to drop too low resulting in soggy, oily fried bananas.
5.Flip the banana pieces as necessary to achieve even browning.
6.Once the banana slices are golden brown, remove them to a plate lined with a piece of paper towel.





               

Steam Durian Cake



Ingredients;


1. Cake flour or Self Raising flour                            200 g.
2. Baking soda                                                     1+1/2 tea sps.
3. White sugar                                                     165 g.
4. Eggs                                                                   3 eggs.
5. Durian fruit                                                      2-3 pcs.
6. Lime juice                                                          1 tea sps.
7. Salt butter                                                          80 g.
8. Salt                                                                  1/2 tea sps.
9. Creamy Milk                                                       2 table sps.
10. Durian smell                                                     1-2 drops.
**In the picture I showed a bread softener but if you dont have it fine too.


How to cook;
All ingredients you will need
1.Prepare Durian paste
I used a pack of Durian fruit ,about 3 pcs.

Used 1 tea sp of lime juice


Mixes lime juice and Durian together

Durian paste
2.Prepare all dry ingredients
I used this flour brand

Use 200 g of cake flour

Use 1+1/2 tea sps of baking soda

Dry ingredients
3.Prepare wet ingredients
Use 3 eggs and 165 g of sugar

I used this Creamy milk brand

Mixes 2 table sps of creamy milk and Melt butter 

Mixes all together

Wet ingredient
4.Mixes Durian paste + Dry ingredients + Wet ingredients.


Mixes Wet ingredients with Dry ingredients first

After that mixes with Durian paste

Use about 1-2 drop 

Now ready !
5.Steam Durian Cake


Steam about 25-30 mins











Blueberries and Raspberry Friands



Blueberry and Raspberry Friands

Ingredients ;

1 cup self-raising flour
1/2 cup almond meal
8 eggs whites
250g melted butter
3/4 cup icing sugar
1 tsp vanilla essence
40g frozen or fresh blueberry
40g frozen or fresh raspberry




Directions;
Step 1
Preheat oven to 200C. Grease a six hole non-stick oval Friands pan.

Step 2
Prepare a flour
Sift the flour and almond meal. (recommended sift 2 times)
Prepare an eggs whites
Stir egg whites and icing sugar, until mix well. Add melted butter and vanilla essence, and combine well.





Step 3
Combine a mixed flour and  mixed eggs whites, stir to combine.
Mixes blueberry, raspberry with 2 tsp self-raising flour, combine
well.








Step 4
Spoon mixture among prepared Friands pan. Place 4-5 mixture raspberry and blueberry on top.
Bake in oven for 15-20 mins or until a skewer inserted into the centres comes out clean.








Step 5
Remove from oven and place on a wire rack to cool slightly before turning out.
Carefully remove and dust with icing sugar. Serve warm. Enjoy! ^_^

Choo chee Mackerel fish(Choo Chee Pla Too)


Choo Chee Pla Too (Choo chee Mackerel fish)

Hello everyone ^_^
Today I am cooking Choo Chee Pla Too or Choo Chee Mackerel Fish for my customer,
I got a chinese family who love Thai Food and alway order food from me 4 day a week.
So I cooked this recipes for them.....
I went to fleminton market (chinese seafood shop)
and see the Mackerel Fish....So freshhhhh
Important is very very cheap,Just $5.50 a kilo
So i bought 2 fish about a kilo.

Choo Chee Pla Too (Choo chee Mackerel fish)
Ingredients; 
Mackerel fish                                           500 g.
Red Curry Paste                                           3 table spoons.
Fish sauce                                                   1 tea spoons.
Sugar                                                          2 tea spoons.
Kaffir Lime leaves, thinly sliced                    10 leaves
Coconut milk                                             300 g.
Red chilli,thinly sliced                                 1 big chilly
Cooking oil                                                 1 table spoon.

Choo chee curry,they all use the same ingredients with Red Curry but
the curry is more thicker and put kaffir lime leave sliced

How to cook;
1.Steam fish in a steamer and put a fish in a plate.
2.Heat oil in a wok over medium-high heat, add red curry paste.
3. Add coconut milk ,Fry until aromatic and until the oil has clearly separated from the coconut milk. 
4. Add fish sauce and sugar.

5. Stir fry until the sauce is mixed, then add lime leaves and chilly.

6. Put sauce on top of the fish. Serve immediately with steamed rice.
  
                         Usaually some recipe,They will tell you to put the fish in to choo chee curry directly BUT I did that before......@_@
The fish not cook when you serve.....all blood come out...
So That why we need to steam the fish first.

 Also some recipe tell you to stir fried curry paste with coconut milk..
But from my recipes,I recomment to stir fried curry paste with cooking oil first..
Because after the curry paste mixes up with the oil well and cook...
After that you put coconut milk..your curry will turn to red colour ,look yummy and smell good the curry.

after put all ingredient,put choo chee curry on top of the fish,put some chilly,kaffir lime leave and coconut milk.....YUMMMMM
