Hello everyone ^_^
Today I am cooking Choo Chee Pla Too or Choo Chee Mackerel Fish for my customer,
I got a chinese family who love Thai Food and alway order food from me 4 day a week.
So I cooked this recipes for them.....
I went to fleminton market (chinese seafood shop)
and see the Mackerel Fish....So freshhhhh
Important is very very cheap,Just $5.50 a kilo
So i bought 2 fish about a kilo.
Choo Chee Pla Too (Choo chee Mackerel fish)
Ingredients;
Mackerel fish 500 g.
Red Curry Paste 3 table spoons.
Fish sauce 1 tea spoons.
Sugar 2 tea spoons.
Kaffir Lime leaves, thinly sliced 10 leaves
Coconut milk 300 g.
Red chilli,thinly sliced 1 big chilly
Cooking oil 1 table spoon.
Choo chee curry,they all use the same ingredients with Red Curry but
the curry is more thicker and put kaffir lime leave sliced
How to cook;
1.Steam fish in a steamer and put a fish in a plate.
3. Add coconut milk ,Fry until aromatic and until the oil has clearly separated from the coconut milk.
4. Add fish sauce and sugar.
5. Stir fry until the sauce is mixed, then add lime leaves and chilly.
6. Put sauce on top of the fish. Serve immediately with steamed rice.
Usaually some recipe,They will tell you to put the fish in to choo chee curry directly BUT I did that before......@_@
The fish not cook when you serve.....all blood come out...
So That why we need to steam the fish first.
Also some recipe tell you to stir fried curry paste with coconut milk..
But from my recipes,I recomment to stir fried curry paste with cooking oil first..
Because after the curry paste mixes up with the oil well and cook...
After that you put coconut milk..your curry will turn to red colour ,look yummy and smell good the curry.
Follow instruction no.2 You can see in the photo below...after you put coconut milk ...you can see the oil turn to red colour... |
