SON-IN-LAW-EGGS (ไข่ลูกเขย)



This fascinating name for this dish comes from a story about a prospective bridegroom who very much wanted to impress his future MOTHER-IN-LAW and devised a new recipe based on the only dish he knew how to MAKE-BOILED EDDS.


Ingredients;
Hard boiled Egg                        4 eggs
Oil,for deep frying                     3-4 cups
Fried Red onion                          3    tbs
(you can buy a ready Fried Red onion  from chinese grocery about $2.10)
Fresh Coriander leaves

For the sauce
Palm sugar                               5 tbs
(you also can use normal sugar instant but used palm it better)
Fish sauce                               2 tbs
Tamarind juice                        3+1/2 tbs
(you can buy a ready tamarind juice from chinese grocery about $1.80)


How to cook;
1.Heat the oil in deep frying to 190 C/350 F.
Deep fry the eggs in hot oil for 3-5 mins,until golden brown.
(cook 's tip ; do not deep frying too long because the egg skin will become hard to eat)




2.Make the sauce.Put the palm sugar,fish sauce and tamarind juice in a pan.
Bring to boil,stiring until the palm sugar dissolves,lower the heat and simmer for 2-3 mins.
Taste and add more sugar,fish sauce or tamarind juice,if needed.

3.Cut haft of each eggs and add fried red onion on top of each.
Drizzle with the sauce and spring over. on top wih coriander and serve.
