Turmeric Chicken Soup (ไก่ต้มขมิ้น)

Turmeric Turmeric
Turmeric has a peppery, warm and bitter flavor and a mild fragrance slightly reminiscent of orange and ginger, and while it is best known as one of the ingredients used to make curry, it also gives ballpark mustard its bright yellow color.
 
Turmeric comes from the root of the Curcuma longa plant and has a tough brown skin and a deep orange flesh. Turmeric has long been used as a powerful anti-inflammatory in both the Chinese and Indian systems of medicine. Turmeric was traditionally called "Indian saffron" because of its deep yellow-orange color and has been used throughout history as a condiment, healing remedy and textile dye.


Turmeric (Curcuma longa), the bright yellow of the spice rainbow, is a powerful medicine that has long been used in the Chinese and Indian systems of medicine as an anti-inflammatory agent to treat a wide variety of conditions, including flatulence, jaundice, menstrual difficulties, bloody urine, hemorrhage, toothache, bruises, chest pain, and colic.

Ingredients;
Chicken Wing                     1/2 kg
Water                                   6 cup
Tumeric,thinly sliced              5-6 pcs
Tammarine,dried                  15 g
Lemon grass                          1   lemon grass or 25 g.
Red onion,pressed                 2 onion or 10 g
Garlic clove,pressed              2 garlic
Salt                                      1 ts
Sugar                                    2 ts
Fish Sauce                             2 tbs
Kaffir lime leaves                   5 leaves
Tomato,cut in 4 pieces           1 tomato
Pickled Galanga                       4 pcs
Chilly,sliced                            2 chilly          



you can buy a pickled galanga from any asian grocery about $1.80 


cut 1/2 kg of chicken wing in a small piece




How to cook;
1.Heat 6 cups of water in a medium pot on high heat,
  Add
Tumeric,thinly sliced              5-6 pcs

                       Lemon grass                          1   lemon grass or 25 g.
           Red onion,pressed                 2 onion or 10 g
Garlic clove,pressed              2 garlic
Pickled Galanga                       4 pcs
for 1-2 mins


2.Add
Chicken Wing                     1/2 kg
Tammarine,dried                  15 g
Salt                                      1 ts
Sugar                                    2 ts
Fish Sauce                             2 tbs
Tomato,cut in 4 pieces           1 tomato
; and cover with the lid for 5 mins or until chicken is cooked




3.Taste a soup is sour enough,take out a tamarine,otherwise it will too sour.
              Add chilly and Kaffir lime leaves.
             Serve with steamed rice.
